Hey there. A long time science enthusiast here, hoping to give you a little clarity on your dirty shoes.
First of all, I would like to say that I like how you think. It my personal thought that there nothing so complicated going on. Perhaps the coating you applied simply changed the way that light reflects off of your shoes, resulting in them looking dirtier. Or even more likely is that the dryness resulting from the coating being hydrophobic is causing the dirt build up to simply look more voluminous, or simply put: dry dirt is more noticeable.
